Ingredients
- ¾ cup soy sauce
- 1 teaspoon wasabi paste
- ½ tablespoon minced ginger
- 2 teaspoons minced garlic
- 2 tablespoons mirin
- 2 tablespoons sake
- 3 drops toasted sesame oil
- 1 pound albacore cut into 4 ounce steaks
- ¾ cup sesame seeds
Directions
In a small sauce pan simmer all of the ingredients except tuna & sesame seeds for about 5 minutes or until slightly thick. Cool. Brush albacore steaks with reduction and chill for 15 minutes. Press steaks in sesame seeds. Sear tuna over medium-high heat for 20-50 seconds on each side depending on thickness – the fish should be nicely seared but still rare. Serve tuna sliced with additional reduction drizzled over steaks or for dipping.
