Mediterranean Baked Halibut

Ingredients

  • 12-8 ounces Halibut Fillets
  • 2 ½ cups Lemon juice
  • 3 Tablespoons Dijon mustard
  • 3 3/4 cup extra virgin olive oil
  • 2 1/2 cup Cherry tomatoes, halved
  • 12 ounces kalmata olives, pitted
  • 1/2 cup capers
  • Salt and Pepper to taste

Directions

  • Wisk together lemon juice and Dijon mustard.
  • Add extra virgin olive oil to emulsify.
  • Add tomatoes, olives, capers, salt and pepper.
  • Arrange fillets of Halibut in baking dish, placing sauce over.
  • Bake on 400°F for 7 to 10 minutes.
