Ingredients
- 12-8 ounces Halibut Fillets
- 2 ½ cups Lemon juice
- 3 Tablespoons Dijon mustard
- 3 3/4 cup extra virgin olive oil
- 2 1/2 cup Cherry tomatoes, halved
- 12 ounces kalmata olives, pitted
- 1/2 cup capers
- Salt and Pepper to taste
Directions
- Wisk together lemon juice and Dijon mustard.
- Add extra virgin olive oil to emulsify.
- Add tomatoes, olives, capers, salt and pepper.
- Arrange fillets of Halibut in baking dish, placing sauce over.
- Bake on 400°F for 7 to 10 minutes.
